Italian Tofu Sandwiches

For dinner Sunday night we needed to get away from all the mac 'n cheese, so I whipped up super easy Italian-style sandwiches for dinner.  I browned Italian seasoned tofu on both sides, topped with jarred pasta sauce, melted vegan pepper jack cheese on top, and served them on toasted Italian rolls.  Quick, easy, and yum.
The result tasted like tofu parm - reminiscent of meatball subs when I was a kid.  They were also incredibly filling and there was no need for anything else on the side.  This recipe's a keeper.
