Monday morning I was out of bananas, which turned out to be a blessing in disguise because it forced me to be inventive and I ended up making the best protein shake ever!!! I blended together frozen strawberries, frozen mango, plain coconut yogurt, a bit of vanilla coconut creamer, a bit of sugar, vanilla protein powder, vanilla soy milk, and flax seeds. It was incredibly delicious. So good, in fact, that I made myself another one Tuesday morning. Who needs bananas?
For dinner I was feeling pretty lazy and it was too hot to cook, so I put together a quick Tofurky sandwich with vegan pepper jack cheese, tomato, and mustard on potato bread. As they say: quick and dirty, but it gets the job done.
